I have found that there are many easy to make online recipes for jams that make claims that the recipe is sugar-free. Yet many include some form of a sweetener. When biting into fresh strawberries, do you really think that it needs more sweetness? Many people enjoy eating this fruit just the way it is.
Strawberries happen to be one of my favorite berries that I love eating on its own. And in my personal opinion, I do not feel that sugar should be added when making them into a jam. When you cook this fruit, the natural sugars will start to caramelize which adds to the sweetness. Here is a recipe for how I make all types of jams, fruit butter, or marmalades.
My recipe for making strawberry jam will take a bit of time. This is because it does not contain natural sweeteners or sugars. Yet the final result is pure and wholesome strawberry goodness without Sugar. It has more than enough sweetness along with a fantastic creamy and smooth consistency. I can promise that if you enjoy strawberries when they are fresh, you are going to enjoy this recipe to make a jam which is without sugar.
Paleo Sugar-Free Strawberry Jam
– 2 Cups of frozen and then thawed strawberries (for fresh strawberries, see the notes below)
– 1 Tablespoon lemon juice (fresh)
– 1 Tablespoon water
– 2 Teaspoons Arrowroot powder
Easy to make Recipe
– Puree the strawberries once thawed in a blender or food processor. * If you use fresh strawberries, refer to my notes below.
– Whisk the arrowroot powder, lemon juice and water in a saucepan, followed by adding the puree.
– Bring the mixture up to a boil using a medium heat and make sure that you stir frequently.
– Lower the heat until the mixture is simmering. It will take about 50 minutes before the mixture will start to thicken. As it does start thickening make sure you carry on stirring to prevent the jam from burning. The jam is ready when you make a line through the middle using a spatula made out of rubber and it leaves a hole which will stay open for a couple of seconds before it fills in again.
– Remove the jam off the heat and allow to cool. As the mixture cools down it will thicken even more. If the mixture is too thick, add small amounts of water at a time until you are happy with the consistency. If the mixture is too thin you can put it back on your stove until you reach the desired consistency.
Try to use Fresh Strawberries instead of strawberry preserves
If you prefer using strawberries that are fresh, you can add the strawberries with the arrowroot powder, lemon juice, and water and heat for at least 5 minutes which will start to soften the fruit. Puree your mixture in a food processor or blender and then put it back on the heat and continue to follow the 3rd and 4th step as stated above.
You can keep your sugar free jam in a container that is airtight in your refrigerator for 2 months.
